Vegetable Rice/pulao

This can be done in a rice cooker as well. Plug in the cooker and heat the base and follow the same instructions from 1.

Ingredients:
2 cups of frozen vegetable (carrots, corn, peas, beans)
2 tsp ginger garlic paste
1 onion diced
1 bayleaf
1 tsp cumin seeds
2 cups rice( sona masoori / jeera samba)

Method:
1. Pour 2 tbsp oil in a pressure cooker or rice cooker.
2. When heated, add bayleaf, cumin seeds and see it splutter.
3. Add onions and fry well till browned. To this add ginger garlic paste and fry till the raw smell disappears.
4. Wash the vegetables, drain well and add these to the mixture in 3.Toss for a few minutes till they get a fresh colour.
5. Add washed rice to this and toss well for 5 minutes so that the rice gets coated with the other ingredients and loses its moisture.
6. Then add 4 cups water. Cover and cook on a low flame or for 2 whistles.
7. Switch off and open the lid only after 10 minutes after the steam has subsided.
8. The rice cooker will turn itself off when cooked.
This tastes good with a simple salad of diced onions, tomatoes and cucumber with a dash of vinegar, salt and coriander leaves. Yoghurt can be mixed into this as well.
