Wonderful on a cold rainy day.
Ingredients:
6 potatoes , peeled and grated
2 tbsp plain flour (chickpea flour/besan if you have it)
1 egg-white lightly beaten
1/4 tsp. black pepper
1/2 tsp salt to taste.
Handful of coriander and one diced green chilli(optional)
Grated cabbage can also be added
Method:
-Preheat oven to 210 degrees celsius.
-Grease a baking or muffin tray with oil spray or butter.
-Squeeze out excess water from the grated potato.
-Combine with egg, flour,salt and pepper.
-Shape this mixture into small patties or put tbsp of this mixture into your muffin tray.
-Bake for 30 mins turning once when golden brown on one side.
-Place under the grill in the end if you want a crisper finish.
-Or if you feel you can aford to put on a few calories,fry in hot oil.
-Enjoy with a hot drink.
