TERESA'S RECIPE
Ingredients :
Cupcakes
60g butter, softened
60g soft cream cheese
3/4 cup firmly packed brown sugar
2 eggs
1/2 cup milk
1 1/2 tbsp golden syrup (or 2 tbsp maple syrup)
1 1/2 cups SR flour
1/2 tsp bi carb soda
2 med ripe bananas, 1/4d lengthways and sliced thinly
Ingredients Frosting:
30g butter, softened
80g soft cream cheese
1 tbsp golden syrup (or 1 tbsp maple syrup)
1 1/2 cups icing sugar
Method:
preheat oven to 180 C, line a 24 mini muffin pan or a 12 standard muffin pan with paper cases
Beat butter, cream cheese and sugar with electric mixer until fluffy. Beat in eggs one at a time. Stir in milk, syrup and sifted dry ingredients. Fold in bananas.
Put into paper cases, (this made 42 mini cupcakes)
Bake 12-15 mins for mini cupcakes, 20-25 mins for standard
Cool on wire rack.
Make frosting: Beat butter, cream cheese and syrup with electric mixer. Beat in sifted icing sugar in batches
