Okra fry

Recipe for Bhindi fry:

Ingredients

For The Stuffing
1 tbsp coriander (dhania) powder
1 tsp 1 tsp cumin (jeera) powder
1 tbsp chilli powder
1 tsp dried mango powder (amchur) (amchur)
1/4 tsp turmeric powder (haldi)
salt to taste

Other Ingredients
1/2 kg ladies finger (bhindi)
3 to 4 tbsp oil
Method
For the stuffing
Combine all the ingredients in a bowl and keep aside.

How to process
Wash, wipe and slit the ladies finger into length wise but not cutting it into half.
Stuff the ladies finger with the stuffing and keep it on a plate and keep aside.
Heat the oil in a thick wide non-stick pan, place the stuffed ladies finger and fry on a medium flame, fry till done from all the side.

Tip
Cut ladies finger into small rounds.
Heat oil in kadhai fry the ladies finger and powdered masala till it is cooked.

Variation
Add equal amount of potato pieces to get the potato fry.
