Equipment
You will need a 20cm x 30cm slice pan.
Ingredients
150g unsalted butter, softened
275g (1 1/4 cups) caster sugar
1 tsp vanilla bean paste
2 eggs, lightly beaten
250g (1 2/3 cups) self-raising flour
160ml (2/3 cup) buttermilk
300g frozen mixed berries (see note)
Cinnamon almond topping
2 tbs caster sugar
1 tsp ground cinnamon
40g (1/2 cup) flaked almonds
Method Notes
Step 1
Preheat oven to 180C. Grease pan and line with baking paper, allowing a 2cm overhang on long sides.
Step 2
Using an electric mixer, beat butter, sugar and vanilla for 5 minutes or until light and fluffy. Add eggs, one at a time, beating well after each addition. Alternately stir in flour and buttermilk, in 2 batches, until smooth. Gently fold berries into batter and spoon mixture into prepared pan. Smooth top with a spatula or the back of a spoon.
Step 3
To make topping, combine sugar and cinnamon in a bowl and sprinkle half over slice. Scatter slice with almonds and bake for 55 minutes or until top is golden and a skewer inserted into centre comes out clean.
Step 4
Remove slice from oven and cool in pan for 15 minutes, then turn out onto a wire rack to cool completely. Sprinkle with remaining sugar mixture and cut into 12 rectangles to serve.
