Chicken Kolhapuri

Chicken Kolhapuri
1 ½ kg Chicken cleaned and cut into desired pieces.
¼ cup oil
For marination
2 tbsp curds
1 tbsp turmeric
2 tbsp red chillies pd
2-3 tbsp ‘spice mix ‘ ( recipie give below )
For Gravy
3 large Onions sliced
3 tomatoes
4 cloves garlic
3 inch ginger
¾ cup oil
Salt to just
Coriander leaves
1 cup coconut
DRY ROAST
2tbsp coconut
1 tsp Til seeds
SPICE MIX
1tbsp poppy seeds
½ tsp nutmeg
1 tsp jeera
3 tbsp Dhania seeds
1 /2 tsp mustard seeds
1 tsp methi seeds
8 red chillies
4 small cardamom seeds
2 inch cinnamon stick
Pinch hing

PREPARING THE SPICE MIX
1.Heat very little oil and fry all the items that comes under the ‘SPICE MIX ‘in very low heat and switch off the flame when it get fragnant .
2. Dry roast the coconut and seasame seeds till the coconut is light brown .
3. When cool, blend this into mixie into powder.
THIS IS THE SPICE MIX.
To proced,
1. Marinate the Chicken with Curds , turmeric pd, salt, chilli pd, and the spice mix.
2. Keep aside for at least one hour.
3. It can also be kept for overnite in fridge .
FOR GRAVY
1. Heat oil in a pan . Fry onions .
2. Now Grind together Coconut , tomatoes, fried onions, coriander leaves, ginger, garlic to a masala.
PREPARATION
1.Heat oil in a cooker body ,add the ground masala and fry till raw oil float on top.
2. Now add the Marinated Chicken and toss well. Fry for few minutes.
3. Add some water enuf to cook.
4. Cook for 1 whistle and sim the flame for 5 minutes.
5. Garnish the dish with coriander leaves
6 Serve with rotis or rice :) yummmss
