Mutton/Beef gravy

Ingredients:

Mutton/Beef-1 kg
Jeera-1 tsp
Pepper-1 tsp
Small onion-5
Turmeric-1/2 tsp
Coriander leaves-3 tbsp
Sprig of curry leaves.
Cinnamon bark-2
Fennel seeds-1 tsp
Tomato-3 (1 can diced tomatoes)
Red chilli powder-1 ½ tsp
Coriander pwdr- 3 tbsp
1 cup of vegetables( brinjal/potato/ drumstick)
¼ coconut ground to paste with 1 tsp khuskhus
1onion diced

Method:
1. Boil meat with cumin, cubed potatoes, pepper, small onions, turmeric, coriander leaves and some curry leaves.
2. In oil, put cinnamon, fennel seeds, diced onion and curry leaves. Fry well.
3. Add ground paste of ginger garlic and fry again till the raw smell disappears.
4. Then add the tomatoes, red chilli powder and coriander powder and fry again till the oil starts to come up.
5. The soft vegetables can be cooked separately in water and turmeric if it is being used.
6. Now add the cooked meat and vegetables to the tomato mixture in the pan.
7. Add salt and cook again till all the flavours have mixed well.
8. Add coconut paste .Let it cook for sometime and remove.
This gravy is my mothers recipe and has a wonderful aroma and tastes good with rice and a Greens Stir fry.
