Thanks to my friend Theone for this recipe. She is one of the most warmhearted and generous people I know.
This recipe is so easy to make and the use of the microwave saves you time as well.
Panacotta
Ingredients:
600mls thickened cream
600mls fullcream milk
1 cup caster sugar
2 teaspoons real vanilla essence
5 tspns gelatine
Method:
Heat above in microwave for 4 mins.Mix well to dissolve sugar.
Sprinkle 5 teaspoons gelatine onto 5 tablespoons cold water in microwave safe glass container. After it "sponges" (absorbs water) heat for 1 min on high.Stir to dissolve further.If not dissolved completely, microwave for another 20 seconds and stir again. Add to cream mixture and beat well with whisk.
Pour into containers and refrigerate.Serve with fresh fruit/fruit sauce.I like to use berry cocktail bought from Aldi.
