Ingredients:
4 Eggs
1 onion
1/2 tomato(pureed)
3-4 flakes garlic
1/2 inch piece of ginger
1-2 green chillies
2 tbsp chopped coriander leaves
salt to taste
Red chilli powder to taste
3/4th tsp tumeric powder
1/2 tsp coriander powder
3/4 tsp garam masala
2-3 tbsp vegetable oil/ghee
1 cup green peas or 250 gms cottage cheese/paneer
Method:
-Hard boil eggs, remove shell and keep aside.
-Blend onion,garlic, ginger and green chillies.
-Heat oil in a wok or kadai and add onion paste and fry till golden brown.
-Add salt, tumeric, coriander and chilli powder and fry for aminute.Add tomato puree after this.Fry well till the oil comes up.
-Add 2 cups of water and cook till semi dry.Simmer for 10 minutes.
Add eggs, garam masala.
-Switch off flame and add coriander leaves.
Serve on a hot bed of rice or an be enjoyed with chappatis and naan.
