Mexican Tortilla Bake

Ingredients:

2 tbsp olive oil 1 cup tasty cheese, grated
1 onion, diced 1 can red kidney beans
500g mince 2 grated carrots
1 sachet taco mix 3-4 large grated mushrooms
jar of salsa 1 can diced tomatoes
6 burrito tortillas/chapathis

Method:

-Heat oil in frying pan, fry off onion, add mince and brown, add tomatoes, carrots, beans, mushrooms, 1/2 the salsa and the taco mix.
-Stir, cover with lid and simmer 10 mins.
-Heat oven to 180C, grease a round baking dish or high cake tin the same size as tortillas, spoon some of the meat into bottom of the dish, layer tortillas and meat mix till used up, pour other 1/2 of salsa over and sprinkle cheese on top.
-Bake 20 mins or until cheese is browning and melted
-Serve with salad and sour cream/guacamole
