Tomato chutney

Tomato Chutney
(4 ½ cups)
Ingredients:
2 tbsp vegetable oil
½ tsp five-spice blend
2 whole dried red chillies
1 tbsp finely chopped fresh ginger
1 tbsp finely chopped garlic
1 lb chopped tomatoes
1 tsp sea salt
4 tbsp unrefined sugar
3 dried apricots, chopped
1 fresh green chilli, finely chopped (optional)
Method:
-Heat the oil in a cast-iron skillet, over medium-high heat.
- Add the five-spice powder and cook for a few seconds.
- Add the red chillies and stir.
-Add the ginger and garlic. Stir for 5 to 6 seconds.
-Add the tomatoes, salt and sugar. Stir. Lower the heat to medium-low.
-Simmer for 15 minutes, stirring occasionally.
-Add the apricots and green chilli. Simmer for 15 minutes, stirring occasionally. -Serve with your favourite dish
