Here is a recipe which my friend Debi made and was really pleased with the results.
So do go ahead and try it too.
Ingredients:
-a tin of good quality tomatoes
- one chopped onion
- two chopped garlic cloves
- a finely chopped red chilli
- a tablespoon of black olives (pitted and sliced)
- a tin of anchovies
- a tsp of capers and a good handful of fresh chopped parsley.
Method
-Saute the chopped onion, garlic and red chilli for a few seconds until translucent. -Then chuck in the tinned tomatoes and break gently with a wooden spoon to create a sauce.
-Add the anchovies and also smoosh with the spoon to blend in with the tomatoes.
-Add the olives and capers. Finish off with the chopped parsley and add ground black pepper and salt to taste.
Serve over spaghettini with fresh grated Parmesan cheese.
