Double chocolate chip cookies




I have tried many recipes and found this is by far the best one......




Ingredients:
2½ cups plain flour
½ tsp baking powder
¼ tsp salt
1½ cups sugar
280 g cooking chocolate
125 g unsalted butter
2 tsp vanilla essence
4 eggs
125 g choc chips

Method:
• In a bowl, place the cooking chocolate and butter and melt in the microwave.
• Remove and mix well together. Keep aside to cool.
• In a separate bowl, whisk sugar, eggs and vanilla until pale and creamy.
• Add the cooled chocolate mix and whisk together.
• Add flour, baking powder and salt and mix with a whisk until combined. Add chocolate chips.
• Refrigerate for an hour.
• Make small balls and place on a tray with a baking sheet.
• Bake at 180°C for 12 – 15 minutes.
• Enjoy!!

Note: This mix can be frozen and defrosted for 15 minutes before baking.
